
Growing up, as a kid in Chattanooga, my grandmother always made me apple pies. Her name was Beulah, which is a bible name, as referenced in Isaiah 62:4. I couldn’t say Beulah as a little tike. When I tried, it came out Boo Boo.
I loved watching and helping her made her apple pies. She would pile it high with fresh sliced apples and I used to help cut the apples. When she cut out the little squares for the top crust, I would gobble those up. Bake for 40 minutes. Are you kidding? That felt like all day long.
Me: Is it ready yet?
Boo Boo: No and it won’t be if you keep opening up the oven.
Me: Yes mam!
But I had to. The smell made my mouth water.
Me: I think it’s done.
Boo Boo: No it’s not! Now, get away from that oven.
Me: Ok.
Ding! The timer went off.
Me: It’s done! It’s done! Cut me a slice please?
Boo Boo: Ok.
Now, my sweet gal Emily recreates that wonderful childhood experience for me.
Me: Is it ready yet?

Me: Yes mam!
DIRECTIONS:
3 apples (honey crisp are the best)
2 pie crust
Sugar – 1/2 cup reg sugar or 6 packs of sweet n low
Allspice seasoning 1 tsp
Cinnamon- 4 tablespoons
Butter – 1/4 cup
Slice apples thin. Mix together sugar & cinnamon & sprinkle over apples. Put apples in pie crust. Pour butter over apples. Put 2nd pie crust on top of apples & poke holes or cut crust. I sprinkle a little bit of cinnamon sugar over top. Bake at 350 for 40 minutes or until crust is brown.
